Rasterize not interpolating empty cells

Am I missing something or shouldn't the Interpolate Fill Empty Cells option in Rasterize do exactly that? It only seems to work with Height Grid Values but not with scalars or RGBs. Is this a work in progress or something? It's a bit frustrating ending up with a raster that's full of holes.

Seems you are right.
In fact the 'Interpolate' option was added at the time the Rasterize tool was only generating a single (height) layer (and it was called 'Height Grid Generation' by the way).
Then the multi-layers support has been added... but apparently not for the 'Interpolation' mode. We'll add this to the TODO list.

Ok, that's finally done! It will be available in the final 2.8 version.
